South Downs Cellars Wine School - Navigating Wine (3 Session Course) Date: Thursday 18th June, Thursday 25th June, Thursday 2nd July Evening One: Taste six benchmark white wines, exploring how climate and winemaking shape each variety's character. The wines are chosen to show clear varietal typicity, and the session ends with participants building their own personal flavour map. Evening Two: From the silky lightness of Gamay to the structured power of Cabernet Sauvignon, taste six definitive reds and discover how tannin, acidity, and oak define style. Evening Three: Learn the principles of food and wine matching and put knowledge to work. Rather than just explaining pairing ‘rules’ in the abstract, participants will experience first-hand — including deliberate clash pairings that are often the most memorable moments of the whole course. Maybe rules are meant to be broken! By the end of this course you will be able to: • Taste wine systematically using the SWAS method — See, Swirl, Smell (Aroma), Sip. • Identify the hallmark aromas and structural characteristics of 12 major grape varieties. • Understand how climate, terroir, and winemaking choices shape a wine's flavour and style. • Read and interpret wine labels from both Old World and New World regions with confidence. • Apply the five principles of food and wine pairing to any dish and any bottle. • Describe a wine clearly and confidently — whether choosing in a restaurant or a shop. • Build the vocabulary, curiosity, and framework to continue learning independently.
